Dan Clark | Head Chef
Growing up cooking alongside his mother and grandmother, Dan Clark learned a lot about homestyle comfort food in the comfort of his own family kitchen. There is where he developed his love for food – but mom’s kitchen was only the first step.
Dan was accepted to one of the finest culinary institutions in the country, but he preferred a more hands-on approach to learning. While working under a premiere New England chef, Clark fine tuned his classical French cooking techniques and in his time behind the line, he ignited his own style.
Cascade Cafe’s menu is a reflection of Dan’s journey to a head chef – experimental, elevated and yummy like mom made it. Take one bite of the Pig in a Blanket, Cubano or Rabbit Stew and you just may hear her calling you in for dinner.
